Serves 4 people

900g pork ribs
2 tbsp malt vinegar *
2 tbsp sesame oil *
3 tbsp sherry *
1 tbsp honey/ or other liquid sugar type stuff if not got *
90ml rice wine vinegar or white vinegar will do *
4 tbsp soy sauce dark variety *
2 tbsp ground ginger *
2 garlic cloves peeled & crushed *
grated zest of one lime *
4 tbsp soft brown sugar *
1/2 tsp chinese five spice powder*

Method

prep 15 mins roughly cook 1hr 20 mins

wash and dry the ribs
mix together all ingredients marked with a * above into a bowl or jug
using a pastry brush , brush the mixture over the ribs cover pan in foil & cook on a high heat say 220c for 30 minutes basting aT SEVERAL times during that period
when 30 minutes have past reduce temp to 190-200c & cook for another 20 minutes again basting the ribs to really coat them remove foil here

You can pre do the sauce early n let ribs marinate in it if like get better results but leave up to you

serve with what ever you like maybe a nice chow mein or stir fry?
