CHEESE BAKE

WHAT YOU NEED TO MAKE:

25g butter, plus extra for greasing
425ml semi-skimmed milk
125g fresh white breadcrumbs
4 medium free-range eggs
1tsp English mustard (optional)
Good pinch cayenne
pepper (optional)
175g extra mature Cheddar cheese, grated

HOW TO MAKE:

1.Heat the butter and milk until hot but not boiling. Remove from the heat and add the crumbs. Soak for 15 minutes. Meanwhile, preheat the oven to 190C/170C Fan/Gas 5 and grease an ovenproof dish.

2.Put the eggs in a large bowl with the mustard and cayenne, if using. Season and whisk until evenly mixed.

3.Stir in the breadcrumb mixture and cheese. Put in the dish and bake for
45 minutes or until puffed up and starting to brown.
