| CAJUN CHICKEN BAKE
WHAT YOU NEED TO MAKE:
2tsp Cajun Seasoning 605g pack Chicken Thigh Fillets 1tbsp sunflower oil, for frying 1 red and 1 green pepper, roughly chopped 400g can Chopped Tomatoes with Chilli and Peppers 175g Frozen Sweetcorn Long grain rice, to serve
HOW TO MAKE: 1.Sprinkle the Cajun seasoning over the chicken thigh fillets. Gently heat the oil in a flameproof casserole dish and brown the chicken on one side for 3 minutes. Turn over, add the chopped peppers and cook for another 2 minutes.
2.Add the chopped tomatoes, season to taste and bring to a low simmer. Cover the casserole dish and cook gently for 20 minutes, stirring occasionally. Add the sweetcorn for the last 5 minutes and serve immediately.
This dish tastes delicious with white fluffy rice. | |
